Skillet Cookie


Ingredients

- 1 cup organic butter
- 1 cup organic brown sugar
- 1 cup unrefined fine sugar
- 2 tablespoons organic greek yogurt
- 1 teaspoon vanilla 
- 3 cups non-gmo flour
- 1/2 cup non-gmo oats 
- 1 tea sea salt or himalayan pink salt
- 3/4 tea baking soda
- 1 and 1/2 cup chocolate chips

Banana Nut Bread

Ingredients

- 1/3 Cup Coconut Oil
- 1/3 Cup Sugar
- 2 Spoons organic greek yogurt
- 2-3 Bananas (ripe)
- 1 Cup Non-gmo All Purpose Flour
- 1 Cup Non-gmo Wheat Flour
- 1 tsp. Baking Soda
- 1/2 tsp. Baking Powder
- 3 tbsp. Organic Milk
- 1/2 tsp. Vanilla
- 1/2 Cup Nuts
- 1/2 Cup Chocolate Chips

Directions

1. Beat oil and sugar together
2. Add yogurt and bananas; mix well.
3. Mix together all of the dry ingredients, then add to wet mix.
4. Stir in milk and vanilla.
5. Add nuts and chocolate chips if desired
6. Pour into greased floured loaf pan.
7. Bake a 350 degrees for 1 hour
8. Let cool and wrap in saran wrap or foil


Cranberry Pistachio Energy Bites

Ingredients

- 18 dates
- 1/2 cup shelled pistachios
- 1/3 cup cranberries
- 1 tbsp shredded coconut

Directions

1. Blend the dates in the food processor 
2. Add all the other ingredients and blend again
Note: If the other ingredients don't bind together, add a few more dates
3. Finally, roll the mixture into bite sized balls


Chocolate Peanut Butter Energy Bites

Ingredients

- 18 dates
- 1/2 cup peanuts
- 1/4 cup peanut butter
- 2 tbsp cocoa powder

Directions

1. Blend the dates in the food processor
2. Add all the other ingredients and blend again
Note: Add more dates if it's hard to bind
3. Make the mixture into bite sized balls


Apple Spice Energy Bites

Ingredients

- 18 dates
- 1/2 cup pecan
- 1/4 cup dried apple
- 1 tbsp apple butter
- 1/4 tsp cinnamon

Directions

1. Blend the dates in the food processor
2. Add all the other ingredients and blend everything together
Note: Add more dates if it doesn't bind together
3. Make the mixture into bite sized balls

Chewy Fruit Granola Bars

Ingredients

- 1 3/4 cups certified-gluten-free oats
- 1/2 cup coarsely chopped walnuts or pecans
- 3 tbsp pure maple syrup
- 1 ripe banana (about 1/2 cup mashed)
- 1/2 cup unsweetened applesauce
- 1/3 cup dried cranberries
- 1/4 cup (1 1/4 ounces) chopped dried mango
- 2 slices dried kiwi, chopped
- 1 tbsp ground flaxseed
- 1 tsp ground cinnamon
- 1/2 tsp coarse kosher salt

Directions

1. Preheat over to 350 degrees. Line a rimmed baking sheet and an 8x8-inch baking pan with parchment paper cut large enough to come up all four sides of pan.
2. In a medium bowl, stir together oats, nuts, and syrup. Spread mixture onto baking sheet; bake for 10 minutes, stirring halfway through. The mixture should be lightly browned (not dark brown)
3. Meanwhile, mash banana in a small bowl and stir in applesauce
4. Pour oat mixture back into medium bowl and add cranberries, mango, kiwi, flaxseed, cinnamon, and salt. Stir to mix well, and then stir in banana mixture. Once completely mixed, transfer to prepared 8x8-inch pan. Smooth top by pressing down with a rubber spatula. 
5. Bake for 35 minutes, or until bars are browning and pulling away from pan sides. Cool on a wire rack for 15 minutes; then remove by pulling up on the parchment paper. Once cooled, cut into bars. Store in an airtight container.
